This is a follow-up to last weeks “Tuna Salad on ???” I just wanted to show you how many fun and easy variations there are – like I said, your imagination is the limit.

  • 3 oz. chicken (I used leftover rotisserie chicken)
  • 1 t. poppy seed
  • 1. t. Cajun seasoning (or to taste)
  • 1 green onion, diced
  • 2 bread and butter pickles, diced teeny
  • 1 radish, diced teeny
  • 1 1/2 T. Walden Farms Amazing Mayo (or to the consistency that you like)

Mix all the ingredients well.

Best if refrigerated for 20-30      minutes for the tastes to blend. Serve on lettuce leafs.
