Sunday morning I woke up craving lentils. Yeah, I know, lentils??? But lentils it was. So here is my recipe.

  • 1 c. red lentils, rinsed
  • 1 c. onion, diced
  • 3-4 medium mushrooms, about 1 – 1 1/4 cups
  • 3-4 cloves garlic, minced
  • 1/2 T. brown sugar
  • 1/2 t. tumeric
  • 1/2 t. garam masala
  • 1/2 cumin
  • 1/2 t. chili powder
  • 1/2 t. salt
  • 1/2 t. ginger powder (or use fresh)
  • 1 c. tomato puree
  • 1/4 c. coconut milk
  • Olive oil, enough to fry in
  1. Cover the lentils with water. Cook about 30 minutes, until soft. Drain water.
  2. Chop onions. Put in sauce pan or frying pan, Cook about 30 minutes. Add brown sugar, until they finish carmelizing.
  3. Chop mushrooms and mince garlic. Saute.
  4. Add mushroom mix, onions and spices to the lentils. Add tomato puree and coconut milk. Heat until hot. Enjoy!
