This is one of those comfort salads, that our Mom’s use to make. The problem with it is that it used distilled vinegar, which is as we know, possibly made from a glutenous grain. So, no, I don’t want to make it that way. So here is a new, updated, GF version. Bon appetit!

  • 1 large cucumber or 2 small cucumbers, cut thin
  • 1 medium-large tomato, diced
  • 1 small purple onion, diced
  • 1/4 c. white wine vinegar
  • 3/4 c. water
  • 1/4 c. your favorite white sugar
  1. Combine tomatoes, onions and cucumbers.
  2. Sprinkle sugar over the top.
  3. Mix vinegar and water together.
  4. Pour vinegar mixture over the top.
  5. Let marinate several hours or overnight.
