This is enough for 12 cupcakes. If you want to make more multiply accordingly.

  • 3 T. Cocoa Powder
  • 1/3 c. coconut oil, melted (give or take) or vegan butter, softened, but not melted.
  • 1 2/3 c. powdered sugar (give or take)
  • 1 1/2 T. coconut milk (give or take)
  • 3/4 t. almond extract
  • 1 c. coconut (flake)

Mix all ingredient together in a mixing bowl. The reason I say “give or take” is that this is one of those recipes that is affected by the weather, so one day you may need more powdered sugar, another day more liquid. You can mix with a mixer, or just use a spatula and mix until it’s smooth.

Keep this icing cool, because the coconut oil will get melty. If I had had enough vegan butter I would have used that.
