This is another one of those things I missed – Crab Cakes. In fact, there are so many things a GF person misses, crab cakes, meatloaf . . . there are so many things that people who eat gluten never think of. But I have been wanting crab cakes. So, back to the inventing board for me.

  • 3/4 c. almond flour
  • 2 eggs
  • 2 cans crabmeat, drained
  • 1 T. Cajun Seasoning
  • 1/4 c. onion, chopped
  • lemon (optional)
  1. Mix all the ingredients together in a bowl.
  2. Refrigerate for at least 5 minutes to absorb moisture.
  3. Shape into patties, with the size being determined by whether this is a main dish or an appetizer.
  4. Fry until cooked through and browned on both sides. I used my griddle and I cooked them at about 325.
  5. Serve with lemon if desired.
