My Impromptu Lunch

All too often, people make too much out of cooking. It is a chore and something they do from a book. So today, you’re going to see an average day in my kitchen and how easy creativity can be. All of my meals today are impromptu, just a lesson in everyday how-to.

I got out of bed and turned the hot water on. I ground beans for 4 cups of coffee and put it in a French Press. The water came to a boil and I poured it into the French Press.


  • 2 eggs
  • 1 t. half-and-half
  • 1/2 T. butter

In the meantime, I took a small frying pan and melted the butter. I broke the eggs and put a dollop of half-and-half in with the eggs. You can use other things, but I honestly like the fluffiness of the eggs with the half-and-half. I mixed them together with a fork. I then poured it into the pan, stirring periodically (but a lot).


I took a nap before lunch and I woke up wanting fish and straw mushrooms. So, I went and looked at what was available in my kitchen. I had a large piece of fish so I cut it in half. I preheated the oven to 375 and put the fish in a glass pan.


  • 3 oz. fish (I used bass)
  • juice of 2 small limes
  • Sriricha Sauce
  • Truffle oil

After placing the fish in a glass pan I squeezed the juice of two small lime and sprinkled a little truffle oil and Sriricha Sauce on the fish and spread it around.

In the meantime I brought water to boil. When it came to a boil I put the fish in the oven and the dry noodles in the water.

    Leftover Mushroom Cream Sauce for Tomorrow

  • Rosemary
  • Ginger
  • Garam Masala
  • 16 oz. can straw mushrooms
  • 4 0z. cream cheese
  • 4 oz. butter
  • 5 oz almond milk
  • 1 T. Cornstarch (heaping)
  • 1 dollop water
  • 1/4 package GF noodles

I took a small saucepan and threw in the butter, almond milk and cream cheese. Cook over low-medium heat. I then sprinkled some marjoram, rosemary, garam masala, and ginger. It was probably about 1/2 t. each. As I melted the ingredients I realized that the sauce would be thinner than I wanted. So, I took a small glass bowl and put a heaping tablespoon of corn starch in it. I put enough water to melt the cornstarch and when it was a smooth paste put it into the saucepan. The great thing about cornstarch is you can do things like this after the fact without it lumping. I then added the straw mushrooms.

When the noodles were done, I poured them into a colander and ran cold water (not a lot) over them. When the fish was done I pulled it out of the oven and put it on my plate. I then grabbed a handful of noodles and spooned sauce over it.

Note: When I reheated this the next day, I added a handful of grated cheese and baked for 30 minutes.

Total cooking, cleaning and eating time for everything was less than an hour.




  • Red leaf butter lettuce
  • green onions
  • cherry tomatoes
  • mushrooms
  • radishes
  • sunflower seeds
  • pumpkin seeds
  • Balsamic Vinegar
  • Olive oil

I broke up the lettuce, chopped the green onions, mushrooms and radishes and tossed the rest into a bowl. Voila! Dinner!
