I have missed anything biscuits or bread since becoming GF. Mind you, I was never crazy about them until I couldn’t have them. Go figure. But I have so missed them. This is an easy-to-make-in-advance lunch that you can heat in the microwave and simultaenously get your bread fix.

  • 1 3/4 c. Gluten Free Flour #2
  • 1/2 t. salt
  • 1/2 t. baking powder
  • 5 T. butter or margarine, melted
  • 1 c. milk
  • 1 c. grated cheese
  • 1 pkg. Pepperoni
  • Italian Seasoning
  • Rice Flour
  1. Preheat oven to 425.
  2. Mix, flour, salt, baking powder, butter, milk and cheese in a bowl.
  3. Turn out on a cutting board or counter top that has been liberally sprinkled with rice flour. Sprinkle rice flour on hands and on rolling pin.
  4. Roll out dough and cut into circles – I used a canning lid, you can use a opened jar, or a real cutter.
  5. Place on lightly greased cookie sheet.
  6. Put pepperoni between 2 biscuits.
  7. Sprinkle top with Italian Seasoning.
  8. Bake at 425 for 15 minutes.
