I decided I needed something different today so voila! Millet vegan pancakes.

  • 3/4 c. Millet Flour
  • 1/2 c. coconut milk
  • 1 T. egg replacer
  • 1 T. + 1 t. maple syrup
  • 1 t. baking powder
  • 1 t. cinnamon
  1. Mix all the ingredients together.
  2. Coat pan or griddle with coconut oitl.
  3. Fry until one side gets holes in it and flip.
  4. Serve with maply syrup or your choice of topping.
