I decided I needed something different today so voila! Millet vegan pancakes.
- 3/4 c. Millet Flour
- 1/2 c. coconut milk
- 1 T. egg replacer
- 1 T. + 1 t. maple syrup
- 1 t. baking powder
- 1 t. cinnamon
- Mix all the ingredients together.
- Coat pan or griddle with coconut oitl.
- Fry until one side gets holes in it and flip.
- Serve with maply syrup or your choice of topping.
