Mixed with rice

  • 1 can green curry

    With noodles.

  • 1 can coconut milk
  • 2 c. vegetable broth
  • 2 sleeves calamari
  • 1 Dungeness crab, cooked
  • 1/2 lb. shrimp, cooked
  • 2 pieces tilapia, chopped in small pieces
  • 1 c. sliced mushrooms
  • 1/4 c. green onions
  • 1/2 c. chopped spinach, raw and finely chopped
  • 1/2 c. frozen peas
  • 1/4 c. baby corn, chopped\
  • olive oil
  • Noodles or rice
  1. Brown the mushrooms in olive oil. Remove from pan.
  2. In a medium or large saucepan combine 2 c. vegetable broth with coconut milk. Add the sauted mushrooms, finely chopped spinach, baby corn, green peans and green onion. Add green curry. Be careful. I used almost a full can and it was a little spicy.
  3. In the frying pan brown the tilapia and calamari. Add to the coconut milk mixture, along with the crab and shrimp. Heat thoroughly but try not to overcook.
  4. Serve over rice or noodles.
