  • 1 eggplant
  • 1/2 c. sliced onions
  • 1 t sesame oil
  • 2 t olive oil (or any oil you choose)
  • 1 clove garlic, minced
  • 2 T soy sauce (I used Kikkoman GF)
  • 1/2 t honey
  • 1 t Sriracha Sauce
  • 2-4 T water, as needed
  • 1/4 t black pepper
  • 1/4 t. ginger
  1. Peel and chop the eggplant into 1″ squares.2013-07-29 12.02.56
  2. Combine the ingredients, making sure to coat the eggplant.
  3. Saute until the eggplant is soft and browned.
