Lately I’ve had as many so-so recipes as good recipes. Oh, I can eat, but some of the things I’ve been trying have not been perfected enough to share. I have made two pies. The first bottom crust was just bad, the second was alright, but not all that. In fact, the second bottom crust has gotten harder the last couple of days. I even have a theory on that, but I will have to try to correct it, before I can tell everyone.
One of the things I was the most disappointed in was vegan and GF coffee creamer. I bought the commercial flavors, but they only come in plain, French Vanilla, and Hazelnut. That got boring. So then I made some. They just weren’t exactly right. I am at this very moment drinking Almond Joy coffee creamer. It’s GF, jut not vegan and for that I am grateful to International Coffees. Without them, I’m not sure I’d even be a coffee drinker.
So, as we go about our GF journey, we will have near misses or complete failures. That will suck because we often spend so much more for the products we work with to begin with. The flour I uses in my pie crust cost between $10-$20 per bag (both times it was pre-made GF flour). So, those hard crusts were quite expensive to make. I guess what I’m wanting to say is that we will have days were what we make is not quite the same. But don’t give up, because being GF will make you feel so much better. I know it has me.
